oh holy night.

Long lay the world
In sin and error pining
‘Til He appeared
And the soul felt it’s worth

A thrill of hope, the weary world rejoices
For yonder breaks a new and glorious morn’
Fall on your knees, oh, hear the Angels’ voices
Oh, night divine, oh, night when Christ was born

Hope you enjoy your Christmas Eve!

wishlist.

Merry Christmas Eve’s Eve! Are you ready for the holiday? I’m running around all busy and crazy, ’tis the season! Haha.

I’m pretty certain I’m going to end up buying myself Christmas presents. After Christmas.

Here’s what I’m wanting!

Nikon 1, in white.
I have 2 DSLRs, and I’m a Nikon girl, so this is a win. I love my big cameras, but with both boys, I honestly never grab them, and then everything ends up on my phone! This is at the tippity top of my wishlist.

Gold monogram necklace, from here.
I have been looking at this for-ev-errrrr. I definitely want it.

Hunter Wellies, in original green.
I’ve been wanting these boots for a really long time, and I just couldn’t decide on what color. I’m 99% sure that I want the original green ones. So classic!

Crocs Fuzzy Bootie.
Y’all. These. Are. Crocs. Yeah, seriously. And I’m obsessed.

What’s on your wishlist?

black bean burritos.

I had really great pictures of this recipe, but sadly my laptop won’t read my memory card! Ugh. Hopefully I’ll get the pictures on and be able to add them in :]

This is a SUPER easy and YUMMY recipe. It’s so so quick!

Ingredients:
-1 can of black beans
-1 package of cream cheese
-1-1 1\2 cups of salsa
-1 can of corn
-1 can of sliced or diced black olives
-1 bell pepper
-1\2 onion
-burrito tortillas

This is a meat-free recipe, but you can add in browned ground beef or turkey! Even chicken and I think it’d be so yummy!

1. Chop onion and bell pepper in to smaller than bite size pieces.

2. Mix black beans, salsa, corn, bell pepper, onion and olives on a large skillet over medium heat.

3. Cube the bar of cream cheese.

4. Add cream cheese cubes in and mix all together. (This is what makes it sooo yummy and creamy.)

5. Once cream cheese is melted, let everything simmer on low heat for a good 10 minutes, stirring occasionally. This will give it time to mix all the flavors together.

6. In another pan, brown your soft tortilla with some olive oil.

7. Stuff the burrito and brown both sides.

8. Enjoy! Garnish with guacamole (yuck), extra salsa, sour cream, fresh lettuce or anything else you can think of!

This also makes a really great dip! You can serve it with the scoop chips or regular corn tortilla chips. Just use half the serving of cream cheese and only 1 cup of salsa, so it’s not too runny!
